Wines inspired by the spirit of place - ‘L’esprit de lieu’. Authentic, crafted small batch wines. Fruit is sourced from vineyards in the Roussillon located near the southern edge of the St Chinian. Once harvested, the grapes undergo a skin-contact maceration to extract some colour from the skin. Then, the juice, is collected after a delicate pressing and fermented at a low temperature in stainless steel.
This is a dry pale pink rosé, similar in style to a provence rosé. Soft red berry fruits, strawberry and raspberry flavours are supported by deliciously fresh acidity. Great on it's own or would be great with tapenade or a salade Niçoise, a paella or grilled chicken and also fish or lamb with herbs.
